Resumen
The main objective of this work is, through preliminary studies carried out on 10 different farms that establish their activity in the taking and collection of milk that is destined for the production of leaf cheese in the province of Gutiérrez, department of Boyacá, to find out which are the situations that do not meet the basic requirements established by Decree 0616 of 2006 and INVIMA, given that this raw material, like milk, comes from the obtaining of artisanal, ancestral and rudimentary forms, which leads to defects in its quality. in turn in the production of leaf cheese.
