Resumen
This study assessed the pre-feasibility of producing and marketing cereal bars enriched with powdered spinach in Bogotá, Colombia, as an innovative alternative within the healthy snack market. The project arose from the need to offer a functional food with greater nutritional value, aligned with current trends in mindful eating.
