Resumen
The productive models of the food sector represent one of the most dynamic and high-growth industries, driven by consumers who demand increasingly innovative, accessible products with high quality standards. In this context, small businesses have increased their market share, offering alternatives that respond to market demands. This research aimed to design an optimized production model for Bimplin Donut's, a micro-enterprise dedicated to the artisanal production of donuts in the city of Villavicencio, in order to improve operational efficiency and evaluate its financial viability. To this end, a descriptive study with a mixed-methods approach was developed, structured in three methodological phases. The first phase consisted of a diagnosis of the current production process, in which the installed capacity, operating times, and process flow were analyzed, with the purpose of identifying bottlenecks and areas for improvement. In the second phase, a market study was conducted focused on consumer habits and purchase intent. Finally, in the third phase, an optimized production model was designed based on a "U"-type plant layout, oriented toward continuous flow and compliance with Good Manufacturing Practices (GMP), complemented by a financial evaluation projected over five years.
